This recipe can be made using fresh or canned fruit. If you use fresh, just peel, pit and slice into a bowl and stir about 1/2 to 3/4 cup of sugar and let it sit to dissolve. Any kind of fruit can be used for this recipe.
Peaches and Cream Cobbler
1 small package (3 5/8 oz)
instant vanilla pudding
3/4 cup self rising flour
1/2 cup milk
1 egg
3 tablespoons margarine, softened
1 large can, 1 pound 13 oz, sliced peaches, drained, reseving 3 tablespoons juice
(fresh peaches peeled , sliced and mixed with sugar in the summer)
1 package (8 oz) cream cheese, softened
1/2 cup sugar
2 teaspoons cinnamon sugar
Preheat oven to 350 degrees
Mix together pudding mix, flour, milk, egg and margarine.
Beat for 2 minutes and spread in bottom of a flat,
2 quart, 8 x 12 inch baking dish which has been coated with a
non-stick spray.
Drain peaches and spread over dough mixture.
Mix together the cream cheese, sugar and peach juice.
Beat for 2 minutes and spread over peaches.

I have thought about publishing my own cookbook when I retire. I love to cook and try new things when I have the time to stay in the kitchen for a while. I just enjoy sharing great recipes and have over the years collected quite a few.
You will love this peach cobbler recipe. I am a member of an online quilter's guild and sometimes we post favorite recipes on our page along with our quilt pictures and patterns. I had forgotten about posting this peach recipe until one of the ladies made it again and posted how the ladies in her office begged for the recipe. I knew GemMan's peaches were almost here and it would be the perfect recipe of the week for p.commers.
Just wait till Thanksgiving!!
PS If any of you make these recipes, please bring me a sample to my house so that I can do a taste test.........................

I can't wait to try this cobbler. Clint wants me to go over to your place and learn to be a great Southern Cook (just like you) but the cobbler will be a start. I'll let you know how it turns out!

I used blueberries last evening when I made this recipe.
Wash about 3 or 4 cups of berries, put about 3/4 cup of water in a pan with 1/2 cup of sugar and simmer till the sugar melts.
Use that just like the recipe calls for peaches. Drain, reserve some juice and spread the berries over the batter. I did sprinkle 1/4 cup of sugar over the blueberries before adding the cream cheese topping.
It was YUMMY.
Things are going great with me, covered up busy and love it that way.
Lady Raider.............you are welcome at any time in my humble abode.
