Pumpkin Bread
Recipe makes two loaves.
Ingredients:
3 cups all-purpose flour
1 tablespoon + 2 teaspoons Pumpkin Pie spice
2 teaspoons baking soda
1 1/2 teaspoons salt
3 cups granulated sugar
1 can (15 ounces) LIBBY'S 100% Pure Pumpkin
4 large eggs
1 cup vegetable oil
1/2 cup orange juice or water
Optional: 1 cup sweetened dried, fresh (are best) or frozen cranberries
Directions:
Preheat oven to 350° F.
Grease and flour two 9 x 5-inch loaf pans
Combine flour, pumpkin pie spice, baking soda and salt in large bowl.
Combine sugar, pumpkin, eggs, oil and juice in large mixer bowl; beat until just blended.
Add pumpkin mixture to flour mixture; stir just until moistened.
Fold in cranberries (if wanted)
Spoon the batter into prepared loaf pans.
Bake for 60 to 65 minutes or until wooden pick inserted in center comes out clean.
Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely.

For THREE 8 x 4 inch loaf pans: Prepare as above. Bake for 55 to 60 minutes.
For FIVE or SIX 5 x 3-inch mini-loaf pans: Prepare as above. Bake for 50 to 55 minutes.

It is good. I took the other loaf to a friend.
She said it is good with cream cheese on it.

My niece makes a pumpkin roll that has cream cheese mixture on the inside. It's delicious!

Yep--they are fairly easy to make. Come over--I'll give you a piece of pumpkin bread. LOL

Cake
Powder Sugar
3/4 c all purpose flour
1/2 tsp baking powder
1/2 tsp soda
1 tsp pumpkin pie spice (in place of 1/2 tsp grnd cloves and 1/2 tsp cinnamon)
1/4 tsp salt
3 lg eggs
1 c granulated sugar
2/3 c libby pure pumpkin
1 c chopped walnuts (optional)
Filling
1 pkg (8 oz) cream cheese, softened
1 c sifted powd sugar
6 tblsp butter or margarine, softened
1 tsp vanilla extract
Powdered Sugar
For Cake: Preheat oven to 375 F. Grease 15 "x 10" jelly roll pan: line with wax paper. Grease and flour paper. Sprinkle a thin cotton kitchen towel with powder sugar.
Combine, flour, baking powder, baking soda, pumpkin pie spice and salt in a small bowl. Beat eggs and sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan. Sprinkle with nuts.
Bake for 13-15 minutes or until top of cake springs back when touched. Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack.
For filling: Beat cream cheese, pwdered sugar, butter and vanilla extract in small mixer bowl until smooth. Carefully unroll cake; remove towel. Spread cream cheese mixture over cake. Wrap in plactic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving, if desired.
