and this aint your Aint Jemima pancakes either...
and ya better not say IHOP!!!!!
I have been trying to find the recipe for the pancakes
they make up in Pigeon Forge/Gatlinburg and I cant find
out why those are the best pancakes in the world........

Oh my gosh, I totally know what you're talking about! There's a little pancake house up there (I think it's Log Cabin Pancake House) that hubby and I drive up there for....I can't wait to go again in June. The BEST pancakes I've ever had. I wish I knew that recipe!

We eat at the Log Cabin in Gatlinburg or the Pancake house just in Front of the Campgrounds where the Parkway inters and exits pigeon Forge to/from Gatlinburg.
Best Pancakes in the world!!!!!!
Dang, now Im thinking Road Trip!!!

They are the best because you don't have to cook them yourself or clean up the mess, and you are on vacation.
Actually, I'll have to call a friend of mine. I used to have his recipe and I'm not sure what I did with it. Yummy. I know the dry mix had to be sifted three times (or so he said) and he used buttermilk.

I think the one in Pigeon Forge is the same one where we eat! I can't remember the name of the campground, but it's at light #1, right? The food is sooooo good. Yeah, we seriously decided to go up there for our 10th anniversary this year b/c of the pancake place.

Congrats on the anniversary, my wife and I were married in Gatlinburg in a little chapel across from that log cabin pancake house, I think its now a parking lot for outbacks....
But yep, thats the one, the little old ladies all wear clothes that looks like they are straight out "The Waltons" or something.....

Here is how I make mine.
I do not measure, just dump, so these measurements do not have to be followed to the letter. You will find your favorite way to make them using these ingredients. (try whole wheat flour sometime)
4 cups Self rising flour
1/2 cup Corn meal
1/2 cup oil
2 eggs
Mix
add 1/2 cup sugar (more if you like)
1 teaspoon vanilla
Mix well
To this crumbly stuff I add buttermilk. I do not measure but add enough to make it all very smooth. Just keep the beaters going. It is OK if it is thick, just make it smooth.
Have the griddle ready with pure butter melted and waiting.......
Have a glass of ICE water handy. Just before you pour the batter on the griddle, add enough ice water to make it the consistancy to pour. Keep the ice water because the batter will thicken again.

I know it is not the pancake house but this recipe has worked for me for more years than I care to think about.

I shall share it with you: open the pancake mix box and add water. Add a teaspoon of vanilla to really get fancy. The end.
No matter what "instant type mix" I get they always turn out great and my mom thinks I'm finally becoming all domesticated.

"Instant" Pancake Mix Recipe courtesy Alton Brown See this recipe on air Monday Apr. 21 at 8:00 PM ET/PT.
Show: Good Eats Episode: Flap Jack Do It Again
6 cups all-purpose flour 1 1/2 teaspoons baking soda (check expiration date first)
3 teaspoons baking powder
1 tablespoon kosher salt
2 tablespoons sugarCombine all of the ingredients in a lidded container. Shake to mix. Use the mix within 3 months.
"INSTANT" PANCAKES:
2 eggs, separated
2 cups buttermilk
4 tablespoons melted butter
2 cups "Instant" Pancake Mix, recipe above
1 stick butter, for greasing the pan
2 cups fresh fruit such as blueberries, if desiredHeat an electric griddle or frying pan to 350 degrees F. Heat oven to 200 degrees F. Whisk together the egg whites and the buttermilk in a small bowl. In another bowl, whisk the egg yolks with the melted butter.
Combine the buttermilk mixture with the egg yolk mixture in a large mixing bowl and whisk together until thoroughly combined. Pour the liquid ingredients on top of the pancake mix. Using a whisk, mix the batter just enough to bring it together. Don't try to work all the lumps out.
Check to see that the griddle is hot by placing a few drops of water onto to the griddle. The griddle is ready if the water dances across the surface.
Lightly butter the griddle. Wipe off thoroughly with a paper towel. (No butter should be visible.)
Gently ladle the pancake batter onto the griddle and sprinkle on fruit if desired. When bubbles begin to set around the edges of the pancake and the griddle-side of the cake is golden, gently flip the pancakes. Continue to cook 2 to 3 minutes or until the pancake is set.
Serve immediately or remove to a towel-lined baking sheet and cover with a towel. Hold in a warm place for 20 to 30 minutes.
Yield: 12 pancakes

1tsp baking soda
1/2 tsp baking powder
dash of salt
2 eggs
1 T oil
Add enough buttermilk to the batter until it's thick, but pourable. (If you don't use buttermilk, they don't taste right.)
I don't measure exactly. My grandmother taught me and she rarely used measuring spoons or cups.

That sounds gross. It probably looks like pancakes with maggots. Yuk!
