We love it grilled with salt, pepper, and a touch of garlic powder. The trick is not grilling it too long. People are afraid of chicken and they cook it until it's opaque. At that point, it's way too done. Get a thermometer (digital is best) and take it off the grill at 165 degrees, cover it with foil and let it rest for about 15 minutes. It will continue cooking and get to the required 180 degrees. I also fry it in Panko Bread Crumbs. Your fry station should be flour, eggs, then bread crumbs. Dredge in flour, dip in egg, and then into the B.C. and fry. It is so crispy and juicy that way.

Made this one tonight! Thanks to my cousin for the recipe! wink.gif

Boil three or four chicken breast. Shred chicken and put in the bottom of 13x9 baking dish. Sprinkle poppy seeds on top of the chicken (as much as you'd like). In a bowl mix one can of cream of mushroom soup with an 8 ounce tub of sour cream. Spread that on top of the chicken pieces. Crunch/crumble a sleeve of Ritz crackers and sprinkle on top of the soup mixture. Melt one stick (yes, one stick!) of butter and pour on top of the crackers. Bake in a 350 degree oven for 30 mins. an denjoy! Yummy! Goes great with some cut green beans and a fresh cut salad.

Here is a great easy crockpot recipe for Rotisserie chicken.

1 whole chicken
Lawry's seasoning salt
whole potatoes
cooking spray

Wash chicken. Spray crockpot with cooking spray (Pam). Wrap whole potatoes in foil and pot in bottom of crockpot. Spray chicken with cooking spray and sprinkle heavaly inside and out the chicken with Lawry's seasoning salt. Put chicken on top of wrapped potatoes. Cook on high for 4 to 6 hours. (I cook it between 5 and 6 hours.) (It will not come out the same when cooked on low.) You can also just use balls of foil without the potatoes. The potatoes come out so good when cooked like this. This is one of my favorite recipes. This is also very weight friendly!

Try it and let me know how you like it.

as its been named by a wub.gif friend of mine : "b-dub's just like heaven chicken pot pie"

I use two deep dish frozen pie crusts (usually walmart brand, they're cheaper)
and two cans of cream of chick soup.
1 cup of frozen mixed veggies
1 can of drained chicken chunks from tyson (the white premium stuff) or a grilled chicken breast (I use the george forman) cut in bite size pieces
1 medium sized potato, peeled and cut into very small chunks (like an inch or less big)

Preheat to 375
In one pie shell put the potatoes in the bottom.
Then layer with one can of cream of chick soup.
Put in cup of mixed veggies
add chicken
sprinkle some black pepper in there
put the other can of cream of chick over all that
and then put the other pie crust on top.
(it works best for me when the shells are still pretty cold, it pops out of the pie tin easier to do the top.)
Cut or or three slits in the top and put pie on a baking sheet (to catch any boil over.)
Cook that bad boy on 375 for about an hour
wub.gif

it also works with just the cream of chicken soup alone without any other chicken if you don't have any, since it has little chicken bits already in it.

There's nothing like a juicy grilled chicken breast with a side of loaded mashed potatoes (sour cream, butter, cheese, and bacon bits mixed in). I'm making myself hungry. dry.gif

This recipe has about 10 ingredients, but they are mostly canned vegies -- I made it last night, took about an hour from cooking the chicken breasts until it was ready to eat. If you are better organized than I am, you can have the chicken cooked earlier & be eating in 30 minutes tongue.gif !!!

1 (14.5 oz) package Doritos

2 cups chopped, cooked chicken (I usually bake mine with some powdered garlic & cumin)

1/2 cup shredded four cheese Mexican Blend cheese -- divided

1 can cut green beans

1 can Fiesta Corn

1/2 cup sour cream

1 can cream of mushroom soup

2 cans (4.5 oz)chopped green chilies

2 TBSP taco seasoning mix

mix all ingredients except half of the cheese & the doritos. Spoon into 11 x 7 lightly greased baking dish. Top with crushed Doritos (I use less than half of the bag & save the rest to eat with the dinner) and the remaining cheese.

Bake, covered, at 375 for about 30 minutes or until bubbly.

Everyone in my family loves this dish -- I usually double it (there are 5 in my family, basically 4 adults) & will have plenty of leftovers for lunch.

How about...
place a whole chicken in a dutch oven(big pot) and cover it with one bottle of your favorite BBQ sauce and cook for about 1 and 1/2 hours depending on the size of the chicken. Do this over low heat and flip the chicken about every 30 minutes so it cooks evenly. Do not add water you may be tempted but you don't need it. Your chicken will fall off the bone ummmm yummmy.
OR
boil chicken thighs, legs, breasts whatever you like until done. Remove it and keep about 3-4 cups of your chicken broth bring it back to a boil and add yellow rice (a 10 ounce bag). Cut the chicken into bite size pieces and return it to the pot with the rice. Cook til the rice is done. We like to put soy sauce on it after we fix our plates.

I have made this a few times (my own recipe) - tasty and healthy meal...

Mexican Chicken :

chicken breast (pounded down flat)

season with onion, garlic, cumin, soy sauce, season salt, cayenne... (basically whatever spicy taste you like...)
sear and cook in a hot skillet with olive oil
remove from skillet - place in oven safe dish
top with shredded cheddar and monterey jack cheeses
fresh diced tomatos, sliced black olives

bake until cheese is melted and bubbly
top with diced green onions, dab of sour cream
serve on a bed of pintos or refried beans
with tortilla chips

3 or 4 chicken breasts
2 cans cream of mushroom soup
med. size sour cream

place chicken into pan, mix mushroom soup and sour cream together and cover chicken. cook on 375 for an hour to hour 15 minutes

the last 10 minutes you can put cheese or french fried onions on top of the chicken. bake until brown on top.

I serve it with rice, like chicken flavored, or something besides plain.

easy and yummy! and I don't like sour cream or mushrooms??!!??

I made a recipe from Southern Living last night, King Ranch Chicken Casserole. It has a bit of mexican flavor to it. pretty good.

An easy one that my picky eater loves:

INGREDIENTS
1 cup uncooked white rice
1 (10.75 ounce) can condensed cream of chicken soup
1 7/8 cups water
1 (1 ounce) package dry onion soup mix
4 skinless, boneless chicken breast halves

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Spread rice in the bottom of a 9x13 inch baking dish, mix 1/2 of the dry onion soup mix with the rice. Rinse chicken and pat dry; arrange chicken pieces on top of rice.
Mix soup and water together and pour over chicken and rice. Sprinkle the other 1/2 of the dry onion soup mix on top. Cover and seal TIGHTLY with foil. Bake in the preheated oven for 1 to 1 1/2 hours. Enjoy!
