2 lbs yellow squash
2 eggs
1 cup mayonaise
1 cup parmesan cheese
1 small onion (chopped)
3/4 to 1 cup bread crumbs (or dressing mix)
3 to 4 tbls butter
Boil sliced squash in salted water until tender. Drain well. Slightly mash. Combine beaten eggs with mayo, cheese and onion. Stir squash into milk combination. Pour into greased casserole dish. Combine melted butter with bread crumbs. Spread over squash. Cook uncovered at 350 for approx. 30 mins. or until done.

2 cans shoe peg corn
1 small onion (chopped)
2 cups cheddar cheese
1 can cream of celery soup
1 8 oz container sour cream
1 row of Ritz crackers
In flat casserole dish spray with Pam. Pour corn (drained) in bottom and spread over bottom, cream of celery over corn, then sour cream, then onion and cheese. Crumble cracker over top and dot with butter. Don't stir, it's all layerd.
Bake at 350 for 40 minutes.
P.S. I stir, and omit onion.

1 can Cream of Celery Soup
8oz Sour Cream
1 med onion chopped
1 med bell pepper chopped
1 can lima beans (drained)
1 can whole kernal corn (drained)
1 can english peas (drained)
1/2 teaspoon black pepper
salt to taste
Mix all together and put into a casserole dish and top with topping:
Topping: 1 1/2 sticks Ritz Crackers crushed and 1 1/2 stick melted butter...mix together and place over casserole mixture.
Bake @ 350 for 45mins...this is AWESOME!!!

What is "shoe peg" corn?

24oz Cool Whip
2 packs orange jello
1 can crushed pineapple
2 cans mandarian oranges (I usually cut each orange slice in half)
24oz small curd cottage cheese
In a LARGE mixing bowl...mix dry jello mix and cottage cheese..add pineapple and oranges and then Cool Whip...mix well...refrigerate!
This makes alot and it's delicious!!! It can be used as part of the meal or even as a dessert

I just made roasted pumpkin seeds.
Pre heat oven to 300 degrees
Pile drained washed (and patted dry) seeds on a non stick pan, sprinkle liberally with sea salt... spray with canola oil (pam like stuff)
and bake for 50 minutes.
Let cool.. munch away.
