I got this off of one of the Weight Watcher boards. It's great and I don't like fish!! My husband thought it was great too!
Parmesan Herb Baked Tilapia
Serves: 4
4 (6-ounce) tilapia fillets
Cooking spray
1/3 cup (about 1 1/2 ounces) grated Parmesan cheese
1/4 cup fat free mayonnaise
2 Tablespoons minced green onions (I used dried onions from a jar)
1/4 cup dry breadcrumbs (I used Italian)
1 teaspoon dired basil
1 teaspoon dried oregano
1/4 teaspoon sea salt
1/4 teaspoon black pepper
Preheat oven to 400 degrees. Place fish on a foil-lined baking sheet coated with cooking spray. Combine cheese, mayonnaise, and onions. Spread evenly over fish. Combine breadcrumbs and remaining ingredients. Sprinkle evenly over fish. Lightly coat fish with cooking spray. Bake at 400 degrees for 10 minutes or until fish flakes easily when tested with a fork.
